Yields: 4 servings Ingredients: 1 lb. lean boneless pork loin, all fat removed and cut into strips Cooking Spray 1 medium red bell pepper, cut into strips 1 medium yellow pepper, cut into strips 1 medium green bell pepper, cut into strips 1 tbsp. sugar 1 tbsp. light soy sauce 1 tsp. ginger root, finely shredded 1 tsp. sesame oil 1 tsp. rice wine vinegar Preparation Directions: ~ Spray a large skillet with cooking spray. Place over medium high heat. Add pork strips and cook stirring constantly for 5 minutes or until done. Remove pork from skillet. Add bell peppers to hot skillet. Cook about 3 minutes or until peppers are slightly tender, but still crisp. Add pork to skillet. ~ In a small bowl whisk together sugar, soy sauce, ginger, sesame oil and rice vinegar. Add to skillet with meat and peppers. Cook and stir until heated through. About 2 minutes. Calories: 230; Total Fat: 12g; Cholesterol: 71 mg; Sodium: 206 mg; Carb: 7 g; Protein: 22 g.
