Low Calorie Vegetarian Recipes

1st Vegetable Wraps

o Two zucchini

o Two carrots

o ½ acocado (peeled, cored and sliced)

o 2 tablespoons red onion (diced fine)

o ½ teaspoon dill

o ½ c. Sour cream (noFat)

o Dash black pepper

o A TBS. Vinegar (red wine)

o 12 lettuce leaves (Romaine or your favorite)

Chill ingredients. Zucchini & carrot rub. Slice avocado. Mix, dill, pepper, vinegar, zucchini, red onions, carrots and sour cream. Add to vegetable mixture. Place ¼ c. the mixture into the side of the lettuce leaf. Roll and serve. Garnish with grated carrots.

o 1 c. Pineapple (cut or chunked)

o 1 lemon

o 1 tablespoon. Vanilla yogurt
